Slow Cooked Quince
In Autumn fill the house with the scent of quince purchased at the Clunes Farmers' Market. This extraordinary fruit transforms in colour from pale yellow to a deep red as it slowly bakes or poaches; the aroma as it cooks is wonderful.

Available at Clunes Farmers' Market:
- 4 quinces
- 2 cups fruity white wine.
- 1/4 lemon
- 1/4 cup honey
You will also need these ingredients that can be purchased in nearby Clunes stores:
- 1/3 cup sugar
- 4 whole cloves
- 1 or 2 star anise
- 1/2 stick cinnamon
Peel and halve or quarter the quince - remove the core - and place one layer in a baking dish. Mix all the other ingredients, pour over the quince, cover with foil and bake at 150c for around three hours. Or until the quince pieces have turned a ruby red colour and are soft.
