Slow Cooked Quince

Slow Cooked QuinceIn Autumn fill the house with the scent of quince purchased at the Clunes Farmers' Market.  This extraordinary fruit transforms in colour from pale yellow to a deep red as it slowly bakes or poaches; the aroma as it cooks is wonderful.

Available at Clunes Farmers' Market:
  • 4 quinces
  • 2 cups fruity white wine.
  • 1/4 lemon
  • 1/4 cup honey


You will also need these ingredients that can be purchased in nearby Clunes stores:
  • 1/3 cup sugar
  • 4 whole cloves
  • 1 or 2 star anise
  • 1/2 stick cinnamon


Peel and halve or quarter the quince - remove the core - and place one layer in a baking dish.  Mix all the other ingredients, pour over the quince, cover with foil and bake at 150c for around three hours.  Or until the quince pieces have turned a ruby red colour and are soft.
